Niccolai Sestilio (born 1/3/1902 in Pistoia) was the founder of Niccolai Trafile, leading company in the construction of dies and machinery for the production of pasta and snacks.

He began to work as a young machinist in the company Garibaldo Ricciarelli manufacturer of dies since 1843. For several years  Sestilio worked at Ricciarelli’s (1923-1935),  period in which the dies were of copper and embossed by hand to create the different shapes of pasta.

In 1935 he started business on his own with two coworkers and a few years later he moved with his family in Sansepolcro, after being offered a good job as head of dies  department  in Buitoni’s pasta factory. In the same department he was later joined by the young son Mario

They worked at Buitoni’s until 1949 when they resigned maintaining an excellent relationship with the same.

In 1949 Sestilio with his son Mario opened a small business for the repair and manufacture of dies in Via San Gregorio in Sansepolcro where they were joined also  by Marcello, second son (born in Sansepolcro 13/06/1938).In 1953 the family returned to Pistoia and carried on business in a small warehouse located in Via Giordano Bruno.

The dies passed from copper to bronze alloy and were executed with small presses and drills. It was also realized a forge for the fusion of the die blocks.

They began to be known by pasta manufactures in Tuscany and in Umbria moving with the bikes and then, with the arrival of the first car, also in the other regions of Italy. The work consisted in the construction of new dies and in the repairing of competitor dies.

Within a short time the little company began to grow taking on 10 workers and expanding their acquaintances in small and big pasta factories. In 1967  the Niccolai family acquired  all the dies department and the brand of Ricciarelli company; the staff of  Ricciarelli was hired by  Niccolai Trafile and so the company transferred the business into a larger building in Viale Adua , where arrived also the first automatic machine tools for the inserts execution.

In the ‘60s were designed and built the first die washing machines,  while in 1990 born the first  automatic cutting group “Cartrapen” and in 1992 the stamping machines and stamping dies for Pasta Bologna.

In 1987 the company moves into a new plant in the industrial area of St. Agostino where they produce  both  for national and international market with a staff of 48 workers.

The story begun by the artisan Sestilio went through the whole dynamic and production updates for  dies, penne cutting groups, die washing machines  and stamping machines.

In the third millennium Niccolai Trafile is a company that combines tradition with a continuous innovation in process and product , as required by the global market.

This Catalogue illustrates life WHEN DRY the commonest pasta shapes. The measurements which accompany the different pasta shapes also refer to pasta in its dry form.

We can, however, supply dies for any pasta shape, irrespective of those indicated in this catalogue. For the quality extrusion of pasta, the die must be constructed in accordance with specific criteria.
